Screamed past the other way and left me wafting in Castrol R ............ brought back found memories ! If I had to light coles, wait until they get to the right temp and stage of burn before cooking I'd not bother at all... gas is just easy. Also due to the easy control your less likely to get crunchy on the outside, raw in the middle. then there are different types of gas BBQ. It's important if your looking for BBQ taste to get the type with a good atomiser. Basically the fat drips out of the meat and burns on something and then smokes the meat adding that BBQ flavour. If the fat just drips past the heat sauce without burning then it will taste more like you've done it under the grill in the kitchen. We have a small cadac safari chef we use when campervaning and it is really good. It smokes really well. But I bought their larger version for home and it did not work the same it was basically a hot plate. So i sold it. I then bought a Weber q which is very easy smokes quite well (not quite as good as the safari chef) and the parts all just fit in the dish washer after. It's all very easy. Quote

Really into smoking and flavoured rubs at the mo, using smoking chips in a kettle barbecue adds more than just flavour, the lidded cooking process keeps the meat juicy too. Quote
