Just changed the oil from10/40 to 5/30. Would this cause the idle pressure to drop from 2.5 to just under 2? If not, any other suggestions as to why?

Because I was told that 5/30 is the correct one.

5/30 is the Ford recommended grade, however for spirited use fully synthetic 5/40 (i.e. Millers CFS 5w40) is ideal.  I think it's quite reasonable for the drop in idle pressure to be compatible with using a slightly thinner grade oil and 2 bar hot idle is still fine, indeed quite good. I wouldn't worry.

More importantly keep your eye on the pressure when it's under some load.  You would want to see over 3 bar, ideally around 4, at 3000 rpm hot.  If this drops below 3 there may be an underlying problem.

when I run mine out next i will take a better note of my oil pressure......
