Using a bike at track days I would say is not too dangerous. Not as dangerous as riding on the road so long as you ride to your abilities. Its a nice controlled environment with no oncoming traffic or lampposts!!! I have wound down the amount of riding

I do on the road as that is far more dangerous and no fun whatsoever.....

back to the carbs vs. injectors then, I guess I'll have to price up management systems and throttle bodies/injectors etc. As long as I route the return pipe and get an injection tank, the choice will still be available then....

I did notice that Westfield supply two different wiring looms for a Zetec (carbs or injection)... This is the only issue really left. What are the differences and which is the most flexible. I assume that an injection loom will have all the connections of a carbed loom plus a few extra connectors. SHuold this be the loom to get ???

It may depend on what type injection system you use. As a rule, multi-throttle body injection usually comes with a stand alone loom, that basically only needs a switched live for it to run. Its possible that the injection loom that Westfield offer is for the single throttle body type system, essentially utilising as much of the standard Ford components as possible.

I am just guessing though, I am sure someone else out there knows........

I agree completely, it is road use that would put me off!

Go for the carb loom from Westfield unless you are using the standard Ford injection. If not talk to Scholar engines who should be able to do you a throttle body kit for about £1300 inc VAT.
