Although today I glued a nut to the bracket (just so it doesnt fall off, its not meant to be structural) so hopefully I will be able to get a bolt in and a spanner on the nut to fasten it all.

So you are saying there isn't sufficient space for a dome head bolt pointing inwards through a bracket (with the head where your sensors currently is)? I can't imagine it would protrude more than the current sensor head but I may be wrong.

Sort of. You can not get a bolt into the hole (through the bracket first) due to the space (or rather lack of) available between upright and brake disc.  The other way around is not a problem (obviously), but then you need to get a nut on the bolt which is a very tricky balancing act.  It's harder to explain than to experience ;)

The Z bracket *may* be an option, but the upright is 'wavy' shaped, so I will have to see how low I can get the shape so it will still be able to fit the sensor

It's only nuts and bolts. Lol you've done an engine swap the brake disk should be a doddle

there's always the option of a longer proximity switch, plenty on eBay and DTA do quite a long one if I recall correctly.

There are different types of inductive sensor, some just need the bolts to pass them without magnets attached .  Some need magnets.   The cost difference is large.  I think the distance needs to be about 2 mm or less for the "without magnet" type.   I used the "without magnet type" and made a Z bracket.   which started looking simple but after i'd tweeted it, ground it, about 50 times it looked quite different.    The other thing its you need to be careful not to overtighten the sensors as they are not all that strong and easy to snap.
