I sync my phone and photos onto my Apple mac but how do I do the same for my wife's phone? Need to back up her pics and contacts etc before switching to iPhone 7 from iPhone 4S

You should be able to do the same, but assuming she has an iCloud account and you back up to iCloud you can restore from there, my wife had just swapped from and iPad mini to a full size one and she used the iCloud back up of the mini to restore on the full size, I'm now using the mini and I used my iPhone backup to restore on the mini. All worked very smoothly.

can you back up and sync both phones onto the same laptop?

Yep. Connect phone one, login to iTunes with phone one iTunes account, back up phone one.  Log out of iTunes. Connect phone two.,enter iTunes account username and password for phone two and back up phone 2

We've several iPhones, iPads and iPods all connected to one computer that use a couple of different apple accounts, an advantage is that we can then share apps between devices, even ones that are paid for.

 

what you can't seem to do is have one iPhone (iPad/ iPod) that connects to multiple computers/iTunes
