With an independant set up at the rear, how is it possible to tell what ratio your differenterial is ?

Mine is in a westfield alloy case, and i can't see it stamped anywhere.

It wont be stamped anywhere. Some diffs have a steel tag under one of the bolt heads but often are missing or unreadable or just have a part no that means b******* all. You will only be able to tell by turning each one of the rear wheels exactly one revolution and counting the total number of turns the input flange rotates. Use chalk to mark a position on the flange to count more easily. Note - if an LSD is fitted, only turning one wheel will b necessary which will become obvious by the number of high turns on the input flange.
